I will be honest, I am NOT a "foodie"... To me, most of the time, eating is a burdensome necessity that I have to force myself to do most days. Don't run away! Feeding myself is what annoys me, I love to feed other people. Actually, I am a pretty decent home cook, chef?? ... Not sure what to call myself. Jeremy says one of the reasons he married me was because I could cook so well. My mom taught me great recipes from and young age, moments that are fond memories that I have carried with me into adulthood - along with my cute recipe box. I also like to find new things to try that I know will be in my wheelhouse. A couple years ago I found a version of this recipe on good old Pinterest and have adapted it to how I like to make it. This is one of the great things about a meatball, they are so versatile! Also, this is one of the ONLY ways I can get Nathan to eat chicken!
*For all recipes I post, I will give it a "spoon value" of 1-5 spoons - which is how much energy it takes me to make it based on the spoon theory - 1 spoon = making a frozen pizza ... up to 5 spoons = Thanksgiving dinner
Okay let's jump into the recipe...
Chicken Parmesan Meatballs (2 spoon recipe)
2 lbs ground chicken
1 cup Italian bread crumbs
2 tsp garlic powder
2 tsp onion powder
1 tsp Italian seasoning
10 oz freshly shredded parmesan cheese
Mix all of the above ingredients in a large bowl. Roll into 1-1 1/2 inch balls and place on a foil coved, greased pan. Bake in the oven at 350 until browned.
In a large pot, add your favorite jarred pasta sauce ( I use Prego -meat ) 4 24oz jars (I just usually have that size in my cupboard) bring sauce to a simmer and add a few shakes of dried basil and parsley. Once the meatballs are done, carefully add them to the sauce and let it simmer on low for 30-45min. Serve with your favorite pasta and enjoy!
